Job Description

Our client is now recruiting for a Director of F&B
Duties and Responsibilities
Menu engineering, designing menus, purchase goods/food items and continuously make necessary improvements
Apply all methods such as food costing, recipes, work schedules and price analysis with direct and indirect competitors
Establish targets, KPI’s, schedules, policies and procedures
Lead F&B team by attracting, recruiting, training and appraising talented personnel
Manage all F&B and day-to-day operations within budgeted guidelines and to the highest standards
Manage banqueting events, potential weddings and parties
Preserve excellent levels of internal and external customer service
Identify customers’ needs and respond proactively to all of their concerns
Comply with all health and safety regulations
Provide a two way communication and nurture an ownership environment with emphasis in motivation and teamwork
Report on management regarding sales results and productivity
International cuisine (western dishes mainly)
Preferably experience with Mediterranean cuisine does not have to be specialized
Train and manage staff
Managing Banquet, Wedding, and other events
Planning pricing strategies
Generating revenues
Managing a team of 30 people reporting directly to him
There will be additional casuals on the high season as well. This number to increase accordingly to the season.
Must have food experience with a background of working in a Hotel or Beach Club/Restaurants
Should be a social and outgoing individual with great hospitality etiquettes since it is leisure resort
Managing restaurants across all timings i.e. Breakfast, Lunch and Dinner and the Buffet used for events as well
Purchasing and finding items required for the restaurant and resort


Must be good with calculations, numbers, and documentation
Should have a hotel background and knows how to deal with other departments such as rooms (room service), dive (special food items for dive trips), etc…
A highly cooperative individual
GCC Experience is a must.
