We are looking for an experienced and skilled cook / Halwai / Indian Sweets Specialist to join our kitchen team in Berlin, Germany.
The ideal candidate should have strong professional experience in preparing authentic North Indian sweets, traditional Indian mithai, and Halwai-style products.
The candidate should be capable of independently managing the complete sweet-making process, including ingredient preparation, cooking, sugar syrup preparation, finishing, portioning, and presentation.
In addition to sweets, the candidate should have practical experience preparing popular Indian street food and snacks, including Vada Pav, Pav Bhaji, Pani Puri/Golgappa, Chaat, Samosa, Kachori, and Aloo Tikki.
We are particularly interested in candidates who have worked as a Halwai in established Indian sweet shops, bakeries, restaurants, or large-scale food production kitchens, especially environments following the structured and consistent standards associated with Bikaner, Haldiram’s, or similar Indian mithai and bakery operations.
Key Responsibilities:
- Prepare a wide variety of authentic North Indian sweets and traditional mithai using traditional Halwai techniques.
- Prepare sweets such as Gulab Jamun, Jalebi, Barfi, Ladoo, Rasmalai, Rasgulla, Kaju Katli, Peda, Halwa, Kalakand, and other traditional Indian sweets.
- Prepare and work with traditional Halwai ingredients including khoya/mawa, paneer, ghee, milk, nuts, flour, gram flour, and sugar syrup (chashni).
- Prepare authentic Indian street food and snacks, including Vada Pav, Pav Bhaji, Pani Puri/Golgappa, Chaat, Samosa, Kachori, Aloo Tikki, and similar items.
- Prepare chutneys, fillings, sauces, spice mixes, and other components required for sweets and street food.
- Handle bulk and large-scale production while maintaining consistent taste, texture, quality, and presentation.
- Follow standardized recipes and production processes to ensure consistency and quality.
- Maintain high standards of food hygiene, kitchen cleanliness, food safety, and product quality.
- Monitor ingredient usage, control wastage, and ensure proper storage and handling of food products.
- Assist with festive sweets, special occasions, catering orders, and high-volume production.
- Work efficiently with the kitchen team and manage production according to daily requirements.
Requirements:
- Proven professional experience as a Halwai / Indian Sweet Maker is essential.
- Strong hands-on expertise in North Indian sweets and traditional mithai preparation.
- Ability to independently prepare a wide range of Indian sweets from scratch.
- Strong knowledge of traditional Halwai techniques, cooking methods, ingredients, and sugar syrup preparation.
- Experience with large-scale/bulk sweet production.
- Practical experience in preparing Indian street food and snacks is required.
- Good knowledge of Indian spices, flavours, traditional recipes, and preparation techniques.
- Ability to maintain consistent taste, texture, quality, and presentation under pressure.
- Strong understanding of food hygiene, safety standards, and kitchen SOPs.
- Previous experience in an Indian sweet shop, Halwai kitchen, bakery, restaurant, or large-scale food production environment is preferred.
- Experience working in kitchens following standards similar to Bikaner, Haldiram’s, or other established Indian mithai/bakery brands will be an advantage.
- Ability to manage time, prioritize production, and work efficiently in a busy professional kitchen.
