About the Role
A prestigious luxury restaurant in Dubai is seeking an experienced Cost Controller & Auditor to safeguard profitability through rigorous cost control and internal audit practices. The successful candidate will monitor food, beverage, and operational costs, oversee inventory accuracy, and ensure financial and operational controls are consistently applied across the business.
Key Responsibilities
• Monitor daily food and beverage costs and compare against budgeted targets.
• System recipe creation, UOM setup, and linking recipes to POS menu items.
• Run monthly stock counts, booking stock in the system, and checking stock buffers before reviewing Pos.
• Conduct regular stock counts and reconcile physical inventory against system records.
• Review recipe costing and menu pricing to ensure accurate cost percentages.
• Investigate and report variances, wastage, and discrepancies in stock or costs.
• Verify supplier invoices against purchase orders and delivery notes for accuracy.
• Do daily POS & credit card reconciliations (matching Micros/Sales data against Amex, Network, Groupon, and bank receipts).
• Review cash handling, POS reports, and billing procedures for compliance.
• Conduct periodic internal audits of purchasing, receiving, and store procedures.
• Prepare cost and audit reports for management, highlighting risks and recommendations.
• Ensure proper documentation and controls are in place across outlets.
• Liaise with operations and kitchen teams to promote cost-conscious practices.
Qualifications & Skills
• Bachelor’s degree in accounting, finance, or Hospitality Management.
• 5 years of experience in cost control or internal audit, F&B experience mandatory.
• Strong understanding of F&B costing, inventory, and stock control procedures.
• Proficiency in MS Excel and inventory/POS systems.
• Analytical mindset with strong attention to detail.
• Good communication skills to liaise with kitchen, purchasing, and finance teams.
• High level of integrity and objectivity when conducting audits.
• Fluent in English; Arabic or French is an advantage.
