BARISTA & JUICE MAKER — JOB DESCRIPTION
Position: Barista & Juice Maker
Department: Beverage / Front of House
Reports To: Supervisor / Restaurant Manager
Job Purpose
The Barista & Juice Maker is responsible for preparing and serving high-quality coffee, specialty beverages, fresh juices, smoothies, and other drinks according to the restaurant's approved recipes and standards.
A major responsibility of this position is the correct handling, cleaning, and daily maintenance of the espresso machine, coffee grinders, and beverage equipment.
Key Responsibilities
1. Espresso Machine & Coffee Preparation
- Operate the commercial espresso machine safely and professionally.
- Prepare espresso shots according to the approved recipe, including correct coffee dose, extraction yield, extraction time, and temperature.
- Prepare espresso-based drinks including Espresso, Americano, Latte, Cappuccino, Flat White, Cortado, Macchiato, Spanish Latte, Mocha, and other specialty drinks.
- Steam and texture milk correctly according to each beverage.
- Check espresso quality throughout the shift and make grinder adjustments when required.
- Follow approved recipes and measurements consistently. Staff must not change recipes without management approval.
- Handle coffee beans correctly and minimize unnecessary waste.
- Keep the coffee station organized, clean, dry, and ready for service.
2. Espresso Machine Cleaning & Daily Maintenance
The barista is directly responsible for keeping the espresso machine and grinder clean and in good working condition.
During the shift:
- Purge and wipe the steam wand immediately after every use.
- Keep a dedicated clean cloth for steam-wand cleaning.
- Flush group heads regularly.
- Keep portafilters and filter baskets clean.
- Clean spilled coffee grounds, milk, and water immediately.
- Keep the drip tray and working area clean.
- Never leave dried milk on the steam wand.
- Never use sharp tools, chemicals, or improper methods that could damage the equipment.
End of every day / closing shift:
- Backflush and clean each group head according to the machine manufacturer's recommended procedure.
- Clean portafilters, baskets, group-head areas, and shower screens as required.
- Thoroughly clean and sanitize steam wands.
- Empty and clean the drip tray.
- Clean the exterior of the espresso machine without damaging electronic components.
- Clean the grinder exterior, dosing area, and coffee-ground buildup.
- Clean the grinder hopper as scheduled and according to the correct procedure.
- Clean all milk pitchers, tools, tampers, scales, and barista accessories.
- Leave the complete coffee station clean, dry, organized, and ready for the next shift.
Daily equipment checks:
- Check the machine for unusual sounds, leaks, pressure problems, temperature issues, or error messages.
- Check the grinder for unusual sounds or inconsistent grinding.
- Report any equipment problem immediately to the supervisor or manager.
- Do not attempt technical repairs or dismantle equipment unless specifically trained and authorized.
- Follow the required preventive-maintenance and cleaning schedule.
Failure to properly clean or care for the espresso machine, grinder, or other equipment will be considered a failure to perform a core responsibility of the position.
3. Juices, Smoothies & Cold Beverages
- Prepare fresh juices, smoothies, iced drinks, and specialty beverages according to approved recipes.
- Follow exact ingredient quantities and portion sizes.
- Operate blenders, juicers, ice machines, and other beverage equipment safely.
- Wash and prepare fruits correctly.
- Store fruits, milk, purées, syrups, and other ingredients at the correct temperature.
- Follow FIFO (First In, First Out) stock rotation.
- Check product quality and expiry dates before use.
- Minimize fruit and ingredient waste.
- Clean and sanitize juicers and blenders after use and perform complete cleaning at closing.
4. Hygiene & Food Safety
- Maintain excellent personal hygiene and wear the required uniform.
- Wash hands regularly and follow food-safety procedures.
- Prevent cross-contamination.
- Keep refrigerators, counters, sinks, equipment, and preparation areas clean.
- Never serve spoiled, expired, contaminated, or incorrectly stored ingredients.
- Immediately report any hygiene, food-safety, or equipment issue.
5. Opening & Closing Responsibilities
- Prepare the coffee and juice stations before opening.
- Check espresso machine, grinder, refrigerator, blender, juicer, ice supply, milk, coffee beans, fruits, cups, and other required materials.
- Refill the station before and during service.
- Complete all required cleaning before leaving the shift.
- Ensure equipment is left according to the approved shutdown procedure.
- Inform the next shift or supervisor about shortages, equipment problems, or operational concerns.
6. Customer Service & Teamwork
- Prepare orders accurately and within reasonable service time.
- Communicate professionally with customers and colleagues.
- Maintain a clean and professional appearance.
- Support other beverage-station employees during busy periods.
- Follow instructions from supervisors and management.
- Take responsibility for the equipment and working area assigned during the shift.
Required Skills
- Experience operating a commercial espresso machine is strongly preferred.
- Understanding of espresso extraction, grinder adjustment, milk steaming, and coffee preparation.
- Knowledge of espresso-machine cleaning and basic daily preventive maintenance.
- Ability to prepare juices, smoothies, and cold beverages.
- Good hygiene and food-handling practices.
- Ability to follow recipes accurately and consistently.
- Ability to work efficiently during busy service periods.
- Responsible attitude toward expensive equipment and restaurant property.
