Operations Manager – Multi-Unit Restaurants
Company: SPF Foods Restaurant LLC – The Monk
Location: Dubai
Salary: AED 8,000–12,000 + Performance Incentive
Job Type: Full-time, Permanent
The Role
The Monk is a Dubai-grown Indo-Chinese restaurant brand established in 2011, currently operating five restaurants across Dubai.
We are looking for a hands-on Operations Manager with a strong commercial mindset.
Our SOPs and operating systems are already in place. Our restaurant teams are established and functioning. We are not looking for someone to reinvent the wheel.
The priority is simple:
Maintain operational discipline while taking direct ownership of increasing revenue and profitability across all restaurants.
Key Responsibilities
Own sales, revenue and profitability across all restaurant locations.
Take responsibility for achieving branch-wise monthly sales targets.
Personally identify and execute opportunities to increase dine-in footfall and customer frequency.
Grow delivery and direct-order revenue profitably.
Improve aggregator business while controlling commissions, discounts and promotional spending.
Establish and grow The Monk's corporate catering business.
Acquire corporate offices, business centres, events and recurring B2B customers.
Develop office and corporate business around each restaurant's catchment area.
Build local partnerships and other new revenue channels.
Work with Marketing to convert campaigns, customer databases and promotions into actual sales.
Identify underperforming branches and take hands-on responsibility for improving them.
Improve average customer spend through menu mix, upselling and profitable offers.
Maintain existing SOPs, operational standards and team discipline.
Hold Restaurant Managers accountable for targets, execution and action closure.
Monitor food cost, labour, wastage, inventory and controllable expenses.
Maintain food quality, service, hygiene and compliance standards.
Ensure maintenance and operational issues are closed, not simply reported.
Work closely with Finance, Marketing and Central Kitchen to improve business performance.
Spend significant time in the restaurants and in the market, not only behind reports.
Identify problems and opportunities independently and act—do not wait for ownership to provide a task list.
Requirements
Proven multi-unit restaurant management experience in the UAE.
Experience managing multiple Restaurant/Outlet Managers.
Strong understanding of restaurant revenue, P&L and profitability.
Demonstrated experience in increasing restaurant sales, not only managing operations.
Commercial and business-development mindset.
Experience in corporate catering, B2B sales, local-area marketing or new customer acquisition preferred.
Good understanding of dine-in, delivery, aggregators and direct-order channels.
Strong knowledge of food cost, labour, inventory and restaurant KPIs.
Hands-on and proactive — does not wait for instructions.
Comfortable going into the market personally to develop business.
Strong follow-through and accountability.
UAE Driving Licence required.
Dubai Municipality PIC preferred.

Someone focused mainly on writing new SOPs and procedures.
Someone who believes good operations alone will automatically increase revenue.
Someone who waits for Marketing or ownership to generate business.
Someone who identifies problems but waits for others to solve them.
Someone comfortable simply maintaining the existing business.
We want an Operations Manager who asks every day: Where is the additional revenue going to come from, and what am I doing about it?
